Let’s celebrate Pancake Day with these delicious gluten and dairy free crepes. 🤩Made with @glebefarmfoods Creamy & Enriched oat drink for the perfect dairy free batter! 🙌🏻

This recipe serves 8-10

Ingredients:
🥞Four medium eggs
🥞240g gluten free plain flour
🥞420ml Glebe Farm Creamy & Enriched oat drink
🥞½ tsp vanilla extract
🥞Vegetable or coconut oil for frying

1. Crack the eggs into a mixing bowl with the milk and vanilla and whisk until well combined. Sieve the plain flour into a mixing bowl to get rid of any lumps. Whisk this until you have a smooth, thin batter without any lumps. Set this mixture aside for 15-20 minutes before cooking.
2. Heat a large non-stick frying pan or crepe pan. Add a small amount of oil to the pan to prevent the pancakes from sticking. When the pan is hot, add just enough batter to cover the surface of the pan and swirl it around to make sure the edges are even. Cook until the edges come away from the side of the pan and flip the crepe. Repeat this until you have used all of the batter.

I like to serve my crepes with berries and a sprinkle of icing sugar. Make sure to save this recipe and try it for yourself. 😍🍓🫐

Japanese Dorayaki 🇯🇵🥞🍫

Welcome back to Flippin’ Delicious! 😍 This is Episode 9 and today we are making Dorayaki 🥞 These pancakes traditional have red bean in the centre but today I used Nutella and pistachio cream!

Ingredients:
🥞2 eggs
🥞20ml honey
🥞30g sugar
🥞1/2 tsp baking powder
🥞1/2 tsp bicarbonate of soda
🥞20ml water
🥞90g @freeefoods gluten free self-raising flour
🥞a few tbsps of Nutella or your favourite nut butter, jam or chocolate.

1. Add the eggs, honey, water and sugar to a mixing bowl and whisk until smooth.
2. Add in the baking powder, bicarbonate of soda and flour and whisk again.
3. Add 1-2 tbsp of mixture to a lightly oiled frying pan and cook on a medium/low heat until golden brown on each side (flipping halfway through cooking). Due to the sugar content these can burn easily so keep an eye on them.
4. Once cooked, add a spoonful of Nutella into the centre of one of the pancakes. Add another pancake on top and gently press the edges together.

I like to eat mine warm so the Nutella is all gooey but you can leave these to cool and enjoy them on the go! 🤩🙌🏻

Cheesy Spring Onion Pancakes 🧀🥑🥞

Welcome back to Flippin’ Delicious! 😍 This is Episode 8 and today we are making these Cheesy Spring Onion Pancakes! They are the perfect brunch option when you don’t want something sweet, you really need to give these a try 🤩🙌🏻

Ingredients:
1 egg
140ml milk
110g @freeefoods gluten free self-raising flour
1/2 tsp baking powder
50g grated cheese
3 chopped spring onions
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp chives
Salt and pepper

Cream Cheese Sauce:
2 tbsp cream cheese
1 - 2 tbsp milk or water
2 tsp dried chives
Salt and pepper

Mix all of the ingredients together and cook the batter on a medium heat until the pancakes are golden brown, making sure to flip halfway.

To make the sauce, mix everything together until smooth and keep adding milk until you reach your desired thickness.

I topped mine with smoked salmon, sliced avocado 🥑, @cornishsea_salt ‘s everything bagel seasoning and a drizzle of homemade cream cheese sauce!

Blueberry Pancakes 🫐🥞

Welcome back to Flippin’ Delicious! 🤩 This is Episode 7 and today we are making Blueberry Pancakes 😍 Sometimes you just can’t beat a classic 🙌🏻

Ingredients:
🫐2 eggs
🫐280ml milk
🫐1/2 tsp vanilla
🫐1 tbsp sugar
🫐220g @freeefoods gluten free self-raising flour
🫐1/2 tsp baking powder
🫐50g fresh or frozen blueberries

Simply mix everything together until you have a smooth batter and cook your pancakes on a medium heat until they are golden brown on each side! Stack them high and drizzle them in lots of maple syrup 😍🍁🥞

Scrambled Pancakes 🥞

Welcome back to Flippin’ Delicious! 🤩 This is Episode 6 and today we are making Scrambled Pancakes, or if you are from Austria ‘Kaiserschmarrn’ 😍

These pancakes are sweet, fluffy and so easy to make!

Ingredients:
1 medium egg
150ml milk
1/2 tsp lemon juice
1 tbsp honey/maple syrup or agave
1/2 tsp baking powder
110g @freeefoods gluten free self-raising flour
Optional - icing sugar for dusting

1. Add the lemon juice to the milk and set this aside for 10 minutes, if the milk separates, this is normal!

2. Add the egg, honey and milk to a mixing bowl and mix well. Fold in the baking powder and flour until you have a completely smooth batter.

3. Pour the batter into a lightly greased pan and cook on a medium to low heat. Due to the sugar content this can burn quickly. Let it cook on one side for a few minutes, flip the pancakes and then use a spatula to break the pancake apart into smaller pieces. Cook this for a further few minutes before serving.

I served my scrambled pancakes with raspberries, blueberries 🫐, icing sugar and I had a little bit of toffee sauce on the side and it’s so so good 😍

Baked Pancakes 🥞🍓

Welcome back to Flippin’ Delicious 🙌🏻 This is Episode 5 and today we are making Baked Pancakes 😍 They are so fluffy and are perfect for sharing with friends and family 🫶

Ingredients:
3 medium eggs
60ml maple syrup/agave or honey
240ml milk
80g yogurt
320g @freeefoods gluten free self-raising flour
2 tsp @freeefoods baking powder
Optional - fresh fruit, chocolate chips and nuts

1. Preheat oven to 180C. Add the eggs, maple syrup, yogurt and milk into a mixing bowl and whisk until well combined.
2. Add in the flour and baking powder and fold this in until there are no lumps and the batter is smooth and airy. Add in any chocolate chips, chopped nuts or fruit and fold this in.
3. Pour the mixture into a greased baking dish. Add on any toppings of your choice and baked for 25-35 minutes or until golden brown and the centre of the pancake is bouncy.
4. Slice, serve and enjoy!

I like to drizzle mine with a little bit of maple syrup! It’s so simple and so so delicious 🤩🥞

Porridge Bowl Inspo 🥣

I thought I would share some tips to make your oats super creamy 🙌🏻

1. Low and slow is the key! I like to cook my oats in a pan on a low heat, stirring continuously to get the best, creamy, velvety texture. 🤩

2. Use 150ml water and 150ml milk. Adding extra water makes the porridge a little bit light and also helps with a smoother texture.

It’s really that simple!! I will leave my usual porridge recipe below 🥰

40g gluten free oats
150ml dairy free milk
150ml water
1 tbsp milled flaxseed or chia seeds
1/2 scoop vanilla protein powder (optional)

(ad) Vegan Lasagne 🇮🇹

Say hello to my creamy, dreamy, vegan lasagne! 🤩 This vegan dish gets its velvety texture from a homemade oat bechamel made with @glebefarmfoods PureOaty Creamy & Enriched oat drink. It’s smooth, rich, gluten free, dairy free and vegan, making this lasagne perfect for everyone around the table. 😍🙌🏻

This recipe serves 4-6
For the lasagne sauce:
2 tbsp olive oil
3 cloves garlic
1 large aubergine, chopped
2 red peppers, chopped
1 large onion, chopped
2 carrots, chopped
2 stalks celery, chopped
400g tin of chopped tomatoes
400g tomato passata
2 tbsp tomato purée
1 tbsp italian herbs
Salt and pepper to taste
10-12 free from lasagne sheets
Fresh chopped parsley to garnish
100g grated vegan cheese - optional

For the oat bechamel:
2 tbsp vegan butter
2 tbsp gluten free plain flour
250ml PureOaty Creamy & Enriched oat drink
Salt and pepper

1. Heat 2 tbsp olive oil in a pan and add the garlic, onions, carrot, celery and tomato purée. Cook until the onions are translucent. Add in the tomato purée, passata and italian seasonings and stir.
2. Add in the salt and pepper and cook for 10-15 minutes until the sauce has thickened.
3. To make the oat bechamel, melt the butter in a saucepan over a medium heat. Add in the flour and stir constantly. Slowly pour in the oat milk, still stirring. Bring this to the boil and cook until the sauce thickens. Season with the salt and pepper.
4. Preheat the oven to 180C. Start to layer an oven safe dish with marinara sauce first, then add lasagne sheets, bechamel sauce and repeat. Finish with a thick layer of bechamel sauce and to add some extra colour, add some grated vegan cheese on top.
5. Bake the lasagne for 40-45 minutes. It should be golden brown on top.
6. Leave the lasagne to stand for 5-10 minutes. Sprinkle some fresh chopped parsley on top, then you are ready to slice and serve.

Dutch Baby Pancake 🥞🍓

A Dutch Baby is a glorious Yorkshire Pudding/Pancake hybrid and I am well and truly obsessed 😍You need to give this a try 🤩

Ingredients:
3 medium eggs
1 tbsp caster sugar
100g @freeefoods gluten free plain flour
1 tsp vanilla
150ml milk
20g butter

1. Preheat your oven to 220C. Put your pan in the oven to warm up while you make the batter.
2. Add all of the ingredients apart from the butter into a mixing bowl and whisk gently until there are no lumps.
3. Add the butter to the hot pan and swirl it around. Very quickly pour in the batter and add the pan back into the oven for 20-22 minutes or until it’s very well risen and the edges are golden brown.
4. Remove from the oven, add your favourite toppings, slice and serve!

I like to sprinkle mine with icing sugar and top with banana, strawberries and maple syrup! It’s so good you have to give it a try 😍

Kimchi Pancakes 🌶️ (gluten free & vegan recipe)

Welcome back to Flippin’ Delicious! This is episode four and today we are making Kimchi Pancakes also known as Kimchijeon! These pancakes are perfectly crispy with a chewy middle that is so so good! 😍 You need to try this recipe asap!

This makes one large pancake:
🌶️160g kimchi (I used the @kellylovesasianfood kimchi)
🌶️2 tbsp kimchi juice
🌶️4 spring onions
🌶️4 tbsp cornflour
🌶️80g @freeefoods gluten free plain flour
🌶️100ml -140ml water
🌶️1-2 tbsp vegetable oil

For the dipping sauce:
🌶️1 tbsp gluten free soy sauce (I use the @kikkomanuk gluten free soy sauce)
🌶️2 tsp rice vinegar
🌶️2 tsp maple syrup, honey or agave
🌶️2 tsp sesame oil
🌶️2 tsp sesame seeds

1. Add the flour and cornflour into a bowl and slowly add the water until you get your desired thickness. You don’t want it to be too watery.
2. Add in the kimchi juice, chopped spring onions and chopped kimchi and mix well. Add the oil to a frying pan and add in the mixture. Cook this on a medium high heat until both sides are lightly brown and crispy.
3. Slice the pancake and serve with the dipping sauce and some extra spring onion.
4. To make the dipping sauce, add all of the ingredients into a bowl and mix well.

I am obsessed with this recipe and can’t wait to make it again asap 😍🙌🏻

Double Chocolate Chip Pancakes 🍫🥞

Welcome back to Flippin’ Delicious! 😍 This is Episode 3 and today we are making the amazing Double Chocolate Chip Pancakes 🤩 Who doesn’t love a little bit of chocolate in the morning?!

This recipe makes 6-8 pancakes 🥞
Ingredients:
🥞2 eggs
🥞3 tbsp cocoa powder
🥞1 tbsp sugar
🥞1/2 tsp baking powder
🥞280ml milk
🥞220g @freeefoods gluten free self-raising flour
🥞As many chocolate chips as your heart desires

I topped my pancakes with raspberries, blueberries, almond butter, chocolate sauce and some chopped pistachios! It was so so good 😍 You need to give these a try!

Ingredients:

1 tsp vanilla
150ml milk

These Blueberry & Oat Protein Muffins are just what your morning needs! 🤩 They are made with @glebefarmfoods gluten free oats for a hearty, slow release base. These muffins are not only gluten free but they are also packed with protein so they will keep you feeling full and satisfied all morning. 👏🏻

Ingredients:
🫐240g Glebe Farm gluten free porridge oats
🫐2 large eggs
🫐2 small bananas mashed (can substitute with 100g apple sauce or dairy free yogurt)
🫐250ml Glebe Farm PureOaty Creamy & Enriched oat drink
🫐120g fresh or frozen blueberries
🫐1 tsp vanilla extract
🫐2 tbsp milled flaxseeds
🫐4 tbsp vanilla protein powder

1. Preheat the oven to 180C. Lightly grease a muffin tray.
2. Add all of the ingredients into a mixing bowl and mix until well combined. If the mixture is dry depending on which protein powder you are using, add a splash more milk.
3. Fold in the blueberries and transfer the oat mixture equally into your muffin tray.
4. Bake at 180C for 20-25 minutes or until the tops of the muffins are golden brown.
5. Once baked, leave to cool on a wire rack.

Store these in an airtight container for a week or in the freezer for 1-2 months. I like to warm my muffins up in the air fryer or microwave and add some dairy free yogurt, raspberries, peanut butter and some mixed seeds.😍

Okonomiyaki (gluten free) 🌱🇯🇵

Welcome to Flippin’ Delicious! 🤩 This is the first episode of my pancake recipe series. From classic stacks to wacky and wonderful, this series has got it all! 👏🏻

The first recipe is my take on Okonomiyaki which is a Japanese street food. You can find the recipe below!

This makes one large sharing pancake or you can make 2-3 smaller ones. 🫶

Ingredients:
3 large eggs
3 tbsp @freeefoods gluten free plain flour
1 tsp gluten free soy sauce
1 tsp sesame oil
3 chopped spring onions
1/4 white cabbage thinly sliced
3 tbsp vegetable oil
Salt & pepper

Toppings-
2-3 tbsp gluten free BBQ sauce
2-3 tbsp mayo (I used @kewpie_official mayo)
1/2 tsp dried chives
1/2 tsp sesame seeds

1. Add the eggs, flour, soy sauce, salt, pepper and sesame oil to a bowl and mix well. Add in the chopped spring onions and sliced cabbage.
2. Heat enough oil to cover the bottom of the frying pan. Add the batter and cook over a medium to high heat. Press the mixture down with a spatula. Fry until golden brown, flipping halfway.
3. Once cooked, spread the bbq sauce on top to cover completely. Drizzle the mayo on top on lines and sprinkle with chives and sesame seeds!

Marry Me Chicken Baked Potato 🥔🍅

Baked potatoes are really having their moment so I wanted to share my favourite way to eat them! This creamy Marry Me Chicken is so perfect for meal prep and you can use the left over sauce on pasta! 🤩👏🏻

Ingredients:
2 large potatoes
2 chicken breasts
1 red onion
2 garlic cloves
2 tbsp tomato puree
6 chopped sun dried tomatoes
200ml chicken or vegetable stock
60ml double cream
6 chopped basil leaves
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp Italian herbs
1/2 tsp dried chives
Salt and pepper to taste
As much Parmesan or cheddar as you like!

1. Add the olive oil, diced chicken, herbs, spices and garlic to a fry pan and mix well. Once the chicken is cooked, remove this from the pan.
2. Add the onion, tomato puree and sun dried tomatoes into the same pan and fry for 2-3 minutes. Add the stock and mix well. Cook this for 5-10 minutes before adding the cream.
3. Mix well and add in the Parmesan. Add the chicken and chopped basil back into the pan and mix. Mix well and serve. I like to add a little bit more Parmesan and chopped parsley on top! 😍

Banana Bread Baked Oats with Pistachio Cream 🍌🥣💚

I am absolutely loving anything and everything pistachio flavoured recently so I had to add a drizzle of melted pistachio cream onto my baked oats! It’s such a good combination… you need to try this asap 😍👏🏻

Recipe:
🍌50g gluten free oats
💚120ml gluten free oat milk
🍌1 tbsp maple syrup
💚1 banana
🍌1/2 tsp baking powder
💚1 scoop @macr0mike vanilla buttercream protein powder
🍌measure the chocolate chips with your heart!
💚toppings - a few slices of banana, 2 chopped walnuts and 1 tbsp melted pistachio cream

Blend all of the ingredients together into a smooth mixture and pour into an oven safe dish! Add your toppings and bake at 200C for 15-20 mixture or until golden brown. Add the melted pistachio cream and enjoy 😍

Raspberry Crumble Baked Oats 🥣💕

Happy Love Day! 🥰Whether you are celebrating self love, friendships or your partner, this baked oat recipe is too good not to try and makes the perfect Valentine’s Day breakfast 🙌🏻

Ingredients:
50g gluten free oats
1 banana
1 tbsp maple syrup
1/2 tsp baking powder
120ml gluten free oat milk
1 tbsp raspberry jam
Handful of raspberries

For the crumble topping:
3-4 tbsp oats
1 tbsp coconut sugar
1 tbsp peanut butter or almond butter

Add the oats, banana, milk, baking powder and maple syrup to a blender and blend until completely smooth. Pour this into an oven safe ramekin and add the jam and the fresh raspberries.
For the crumble topping, add all of the ingredients into a bowl and mix it together until it’s thick and crumbly. If it’s too dry add a splash of milk. Sprinkle this on top of the oats. Bake at 200C for 15-20 minutes and enjoy 😍

Say hello to the ultimate breakfast treat 😍 These Brookie Baked Oats combine the best of both worlds: a fudgey brownie and a gooey choc chip cookie all in one bowl 🤩
You won’t believe it’s made out of oats!

Ingredients:
50g gluten free oats
1 banana
120ml gluten free oat milk
1 tbsp maple syrup
1/2 tsp baking powder
1 tbsp cacao powder
1 tbsp chocolate chips

1. Add the oats, oat milk, banana, baking powder and maple syrup to a blender and blend until smooth.
2. Split the mixture in two bowls and add 1 tbsp cacao powder to one of the bowls and mix well.
3. Pour both mixtures into a ramekin at the same time. Top with chocolate chips and bake at 200C for 15-20 minutes.

Love at first bite! 😍 These chocolate covered strawberry brownies are the perfect Valentine’s Day treat 🙌🏻They are rich, fudgey, and packed with lots of oaty goodness. These brownies are made with @glebefarmfoods gluten free porridge oats for a chewy texture which is absolutely irresistible! 🤭

Ingredients:
🍓170g dairy free butter
🍫250g coconut sugar (can sub for caster or brown sugar)
🍓85g cocoa powder
🍫1 tsp vanilla extract
🍓90g Glebe Farm gluten free oats blended into an oat flour
🍫80-100g chopped dark chocolate
🍓2 eggs

For the topping:
🍓100-200g sliced strawberries
🍫100g dark chocolate

1. Preheat the oven to 180C. Line a brownie tray with baking paper and set aside.
2. Warm the butter until it’s melted and add in the sugar. Mix well and fold in the cocoa powder.
3. Add in the eggs, vanilla, oat flour and mix until smooth. Fold in the chopped chocolate and mix once again. Pour the mixture into your lined tray and make sure it spreads evenly.
4. Bake at 180C for 25-30 minutes. Leave to cool fully before decorating.
5. Layer the strawberries on top of the cooled brownie. Melt the chocolate in the microwave or on a bain-marie and then drizzle this over the top. Put the brownie in the fridge for 30 minutes for the chocolate to set before slicing and serving.

Marry Me Chicken Pasta 💍🍝

A pasta dish that is so good people will be asking to marry you 🤭!

This recipe makes four portions and can be easily adapted to make it dairy free and vegan 👏🏻

Ingredients:
200g pasta (I used @pasta_rummo gluten free rigatoni)
2 chicken breasts
1 red onion
2 garlic cloves
2 tbsp tomato puree
6 chopped sun dried tomatoes
200ml chicken or vegetable stock
60ml double cream
6 chopped basil leaves
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp Italian herbs
1/2 tsp dried chives
Salt and pepper to taste
As much Parmesan as you like!

1. Boil your gluten free pasta of choice. Make sure to save 100ml of pasta water.
2. Add the olive oil, diced chicken, herbs, spices and garlic to a fry pan and mix well. Once the chicken is cooked, remove this from the pan.
3. Add the onion, tomato puree and sun dried tomatoes into the same pan and fry for 2-3 minutes. Add the stock and mix well. Cook this for 5-10 minutes before adding the cream.
4. Mix well and add in the Parmesan. Add the chicken and chopped basil back into the pan and mix. Add 100ml of pasta water to thin the sauce out. When the pasta is cooked, drain it and add it to the sauce. Mix well and serve. I like to add a little bit more Parmesan and chopped parsley on top! 😍
