Apple Crumble Baked Oats (GF, DF & Vegan)

If you are anything like me, you are totally oat obsessed! Oats are such a huge part of my diet/lifestyle and love nothing more than coming up with fun new flavours and ways to eat them. These apple crumble baked oats were such a hit on Instagram, so I knew I needed to share the recipe with everybody! This is perfect for a slightly more indulgent or even a healthier alternative to the classic dessert recipe.



 

Serves 1

Ingredients for the baked oats:

50g gluten free oats

1 banana

1 tbsp maple syrup or other liquid sweetener

120ml dairy free milk

1/2 tsp baking powder


For the apples:

1 large red apple, chopped

1/2 tsp cinnamon

1 tsp brown sugar


For the crumble topping:

2 tbsp gluten free oats or gluten free granola

1 tbsp smooth peanut butter or dairy free butter

2 tsp brown sugar

 

Method


  1. Preheat your oven to 210C.

  2. To a blender or food processor, add the oats, banana, maple syrup, milk and baking powder and mix until you have a completely smooth batter.

  3. Pour the batter into an ovensafe ramekin. Add the chopped apples to a bowl and mix well with the cinnamon and brown sugar. Add this on top of the oat batter, it's ok if this sinks a little!

  4. To a seperate bowl add 2 tbsp oats or granola with the peanut butter and brown sugar and mix together well. It should be a crumbly texture.

  5. Sprinke the oat crumble mixture on top of the oat and apple mixture and add this into the oven for 20-25 minutes. It should be well risen with a light golden brown colour.


    Enjoy this hot or cold! If you don't have a lot of time in the morning, bake this the night before and enjoy! This will last in the fridge for 1-2 days. It's absolutely delicious when served with a spoonful or vegan ice cream or custard for a delicious dessert.

 

What can I use instead of bananas?

Well, who knew so many people hate bananas! You can substitute the banana for one eggs, 50g yogurt or even 50g apple sauce.


Can I add protein powder?

Yes! I love adding protein powder to my baked oats. I only use vegan protein powder so I'm not sure how whey protein would work in this recipe. If you find your batter is too thick with the protein powder, add another 30ml-50ml dairy free milk.


Can you freeze baked oats?

Yes, once the oats are fully cooled add them to a freezersafe container and freeze for up to three months. To reheat, microwave them for a few minutes or defrost fully and enjoy them cold.
