Apple & Walnut Loaf Cake (Gluten & Dairy Free)

This is a one bowl bake! My favourite! The is barely any washing up to do so you can tuck into the cake quicker. This is a gluten and dairy free recipe, you can easily make this vegan by substituting the eggs for flax or chia egg. This is my favourite recipe and the cake I bake the most, I hope you all enjoy it as much as I do!





Ingredients:


200g gluten free self raising flour

100g apple sauce (You can make this yourself, I buy it pre made from Clearspring)

1 tsp baking powder

1/2 tsp Xanthum gum

2 tsp cinnamon

1 tbsp maple syrup

100ml dairy free milk

3 medium eggs (can substitute for chia or flax egg)

2 medium apples chopped

100g chopped walnuts


Instructions:


  1. Preheat your oven to 180°C and line your loaf tin. I use a 2lb loaf tin.

  2. Add your flour, baking powder, xanthum gum and cinnamon into a bowl making sure there are no large lumps.

  3. Add the apple sauce, maple syrup, milk and eggs to the dry mixture. Gently mix until you get a smooth batter.

  4. Once you have a smooth batter add your chopped apples and chopped walnuts and mix.

  5. Pour the mixture into the loaf tin and cook for 40-45 minutes. It should be a lovely golden brown.

  6. This step is optional but once cooled you can mix some icing sugar and water together to make a thin icing.




This apple and walnut loaf cake is delicious. Simply store it in an airtight container and it can be stored for up to four days.
