GF + Vegan Welsh Cakes

I lived in Wales for a number of years and Welsh cakes quickly became one of my favourite sweet treats. There were so many amazing places to get fresh Welsh cakes and they even had plenty of gluten free options. Since moving back to England it's something I miss so I just had to make some for myself.


This recipe is gluten free, dairy free, egg free and vegan. It's so simple to make and my entire family loved them! You don't need a griddle to cook these, simply cook them in a frying pan.

Ingredients:

225g self-raising flour (You will need extra when you roll them out)

110g vegan butter (I used Stork)

85g caster sugar (plus extra for dusting)

50g raisins/sultanas or chocolate chips

1-3 tbsp non dairy milk

1 tsp cinnamon

1/2 tsp baking powder



Method:

  1. Mix the flour, baking powder and cinnamon in a bowl. Add your cubed dairy free butter and use your fingertips to rub the mixture to create a fine breadcrumb like texture. Make sure there are no large lumps of butter left.

  2. Add your sugar into the mixture and slowly add your non dairy milk a little at a time until it creates a ball of dough. You don't want this to be sticky, it should be soft. You can always add a touch more flour if it's too wet.

  3. Mix in your raisins/sultanas or chocolate chips. Roll out your dough on a lightly floured surfaces until it's around 1/2 cm thick! Cut into shape using a fluted cutter. I used a 3 1/2 inch cutter. Look below for details about the cutters.

  4. Put your frying pan on a low to medium heat and brush with some butter. You can cook a few Welsh cakes at a time but I would recommend if this is your first time using this recipe to cook one first to get the heat of the pan right. Cook them for three minutes on each side until they are golden. Make sure you watch them as they can burn quickly.

  5. Once the Welsh cakes are cooked roll them in caster sugar while they are still hot and leave them on a plate to cool slightly.

I love to eat these warm with a cup of tea. My entire family love them too! Once you get the hang of what heat to keep your pan on this will be a really easy recipe for you to make. I always suggest cook one in the pan at first just incase the pan is too hot! I really hope you enjoy this recipe as much as I do!
